Garden Flavoured Salt Cod carpaccio

Preparation

Prepare the whipping siphon with red cabbage froth diluted with a little cooking cream. Shake the whipping siphon well and keep it cool. Arrange the slices of smoked salt cod lightly seasoned with a drizzle of extra virgin olive oil, alternating them with the red cabbage froth. Garnish with soya sprouts, dill twigs and a pinch of Harlequin Pepper. Serve with Balsamic Cream.
