Risi and Bisi


Ingredients: 4 portions

  • Water for 15g of Vegetable Superstock 750

Peas are a fresh legume that add fibre and B vitamins to the dish, as well as completing the protein bouquet of the rice: this dish has the noble proteins that we can find in meat, eggs and fish. Animal fats such as butter, Parmigiano Reggiano and bacon are present, yet dosed in a manner which provides flavour without making the dish too caloric.
Prontofresco Vegetable Superstock also adds antioxidants and bioactive substances such as turmeric and black pepper to the dish, a "Winning Pair" that can help us prevent weight gain.


Peel the onion and chop it finely, then chop the parsley and brown everything stirring with a wooden spoon.
Add the peas and cook over low heat for about ten minutes, pour in the stock previously prepared with the water and the Vegetable Superstock and bringing it to a boil. In the meantime, cook the rice in plenty of salted water and drain it when it is still quite firm. Add the rice to the peas and finish cooking by stirring continuously. When the rice is ready, stir in the butter and grated cheese, kept in the freezer for 15 minutes beforehand so that the low temperature it to cream more homogeneously. Let it rest for a few minutes then serve.
