Chianina Beef Tartare with "Formaggio di Fossa di Sogliano" Cheese Mousse


Ingredients: 30 portions


Fill the whipping siphon with cream of "Formaggio di Fossa di Sogliano PDO" cheese and a small amount of cooking cream. Load the whipping siphon with a cartridge, shake well and store in the refrigerator for a few minutes. Finely chop the Chianina meat fillet with a knife until a tartare is obtained; season the meat with a drizzle of extra virgin olive oil, Harlequin pepper and Persia Blue salt. Plate the tartare with the help of a cake ring and garnish with the Fossa cheese mousse, red chilli pepper strips and a few grains of Persia Blue salt.
