Risotto with Pumpkin and 'Nduja


Ingredients: 1 portion


Toast the rice in a hot saucepan without oil and cook with Vegetable Superstock previously dissolved in boiling water.
Flash-fry an octopus tentacle in a hot pan and add a drizzle of extra virgin olive oil after a few minutes.
When the rice is done cooking, turn off the heat, let it rest for two minutes, taste and add salt if necessary.
Cream with Mantovana Pumpkin Cream, garnish with a few drops of 'nduja Sauce, the seared and cut octopus and a pinch of harlequin pepper.Decorate with rehydrated algae and pea shoots.
