Flying Squid sautéed with raisin wine and Pesto Goji


Ingredients: 4 portions

  • Fresh clean flying squid 600
  • Pantelleria Passito (dessert wine) 70
  • Sultanas 30
  • Parsley 1
  • Extra virgin olive oil 40


Fry the flying squids in a pan, over medium heat, with a little oil. Once browned, baste with raisin wine and let it evaporate. Add the sultana raisins previously soaked in water, the pesto and a drop of water. Finish the cooking, sprinkle with fresh chopped parsley and serve.
